Bran Muffins and 7-Layer Cookies

Muffin batter should never be beaten, just stirred to barely blend.
3/4 cup margarine, room temperature
3/4 cup of brown sugar
3 cups flour
3 tablespoons baking powder
3/4 teaspoon salt
3 cups of bran
In another bowl mix:
2 cups of milk
3 lightly beaten large eggs
3/4 cups of molasses
{Raisins optional)
Mix with a large wooden spoon. Add the eggs, milk and molasses to the dry ingredients. Add raisins. Stir and blend with quick strokes.
Preheat the oven. Fill paper lined muffin tins. This will make about three dozen muffins. Bake at 425 degrees for about 15 minutes.

Quick, easy and so delicious!
Melt 1 stick of butter in a 9 x 11 pan and tip the pan to grease the sides.
Add the following ingredients in the order listed.
1 cup Graham cracker crumbs, spread in pan and pat down
1 cup coconut sprinkled over graham crackers
6 oz. butterscotch bits
6 oz. chocolate bits
1 can sweetened condensed milk
1 cup chopped nuts
Bake at 350 degrees for 30 - 35 minutes
